Homemade KIND Bars

  • 4 Tbsp ground flax seeds
  • 1/2 cup raw honey
  • 1 egg white
  • 2 tsp sea salt
  • 1 cup raw almonds pieces
  • 1 cup raw walnuts pieces
  • 1 cup unsweetened large coconut flakes
  • 1 cup unsweetened fine coconut flakes

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix the ground flax seeds with honey is small bowl.
  3. In a large bowl mix the almond pieces, walnut pieces, coconut flakes (large and fine) and salt.
  4. In a mixer (preferably) or by hand, add the honey and ground flax seeds to the large bowl of dry ingredients.
  5. Once the ingredients are well mixed, add the egg white and mix more.
  6. Line a sheet tray with parchment paper and scoop mix onto paper.
  7. Lay another piece of parchment paper on top of the mixture and with your hands spread it evenly on tray so that it extends all the way to the sides.
  8. Press the mixture down firmly with a flat surface - like the bottom of a small pot.
  9. Remove top layer of parchment paper and place in oven.
  10. Bake for 24 minutes, rotating the tray at 12 minutes.
