Honey Lime Halibut

  • 2 lbs halibut, cut into 1-inch thick strips
  • 1 1/2 tsp sea salt
  • 1 tsp mild chili powder
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Zest and juice of 2 organic limes
  • 1 jalapeƱo pepper, seeds and ribs removed, minced
  • 1 Tbsp honey
  • 1 Tbsp olive oil
  • 2 Tbsp coconut oil (for cooking)

Instructions

  1. Mix all marinade ingredients. Pour over fish and let marinate for at least 30 minutes.
  2. Preheat a large skillet over medium high heat. Melt 2 tbsp coconut oil.
  3. Add fish in a single layer (do not overcrowd the pan!). Turn down heat to medium.
  4. Cook for 1-2 min or until fish begins to brown (it will start to turn opaque at the edges).
  5. Flip and cook for another minute, being careful not to overcook (plan for some carryover cooking).
  6. Serve.

Recipe Notes

NOTE: You can make an excellent cream sauce with the pan drippings. Simply pour in 1/4 c of heavy cream or coconut milk. Scrape the bottom of the pan to deglaze any brown bits. Add a pinch of salt, if needed, and pour over your fish.
